First Class of Fresh Black Truffles

Scientists say that it is an ecotype of tuber aestivum, that is, a kind of summer truffle. The most knowledgeable truffles will tell you that it is actually a completely different truffle, it smells different, it tastes different and it comes out at different times of the year (although in many cases the seasons overlap) and they even come to be crossed with tuber aestivum giving rise to mid-summer mid-autumn truffles. But… what is the truth!

Controversy apart from the autumn truffle or tuber uncinatum, it is a truffle that must be given the importance it has.

Black on the outside like its summer and winter sisters but with much more marked warts, and different variations of brown on the inside.

Its aroma, much more intense than that of summer, more earthy like roasted coffee. Its flavor, very powerful.

It is born in limestone soils like the other truffles, in more mountainous regions that have more intense rainfall and in colder shady areas with greater water availability.

It is usually associated with pines or groans and its collection goes from September to November.

Its characteristics and its biological cycles are little known mainly due to the fact that there are very few studies on it.
